The Three Chimneys, Skye, prepares to reopen
Serving the best of Skye land and sea, The Three Chimneys and House Over-By at Colbost is based within an original Skye croft house on the shores of Loch Dunvegan and has built a reputation for serving inspirational dishes that optimise the richness and variety of Scotland’s natural larder under head chef Scott Davies and his team.
Re-opening on 26 April, The Three Chimneys is part of the The Wee Hotel Company owned by Scots-born international hotelier Gordon Campbell Gray, and sister hotel to The Pierhouse Hotel at Port Appin.

It’s not budget, but a high end Restaurant with Rooms and a destination for those with an appetite for fine, fresh food.
Room Service
Warm neutrals and tasteful textiles make rooms housed in a separate building next door to the original Restaurant croft house a luxury lochside haven. One room is designed for easy access all on one level or as a family room and can be set up as a double, twin or shared with a third adult using the sofa bed, with a cot and Z-bed available for babies and toddlers (there is no extra charge for children sharing with parents), while the other five rooms are split level.

Hide AdIn room facilities include ironing board, hairdryer and toiletries from Temple Spa, smart TV, DVD player and Bose Bluetooth Speaker. Direct dial telephone is available in rooms with no charge for local UK calls. Free wifi is available throughout. There are tea and coffee making facilities and fresh milk and mineral water in the rooms.
Wining and Dining
Under head chef Scott Davies The Three Chimneys has continued to carry 3 AA Rosettes and its place in the Good Food Guide and prides itself on sourcing most ingredients from Skye. Local crofters, foragers, fisherman and farmers living within a few miles are part of a long and growing list, including includes beef, wild venison and Iron Age pigs from Orbost Farm, Skye Croft Eggs, seafood from Dunvegan Pier Fishermen and Isle of Skye Sea Salt, whose produce winds up on the plate in the Restaurant. Starters include seaweed cured Wester Ross salmon, poachers relish and crab ketchup, followed by the likes of Soay lamb, beetroot, cabbage, black garlic and bramble sauce followed by apple terrine and sea buckthorn cream and Granny Smith Sorbet and who can resist tasting a selection of Scottish cheeses and oatcakes?
To make your stay on Skye truly special, dine at The Three Chimneys kitchen table for a truly not-to-be-missed experience. The kitchen was designed to accommodate the rustic table and chairs within its own special area. There is no partitioning, or glass, just the full performance of the chefs at work. It can be reserved exclusively for two or a maximum of six guests.
Worth Getting Out of Bed For
Between the villages of Dunvegan and Glendale, The Three Chimneys is a magical base for exploring the Isle of Skye with its mountains, lochs, beaches and distilleries. Ask at reception for recommendations on where to start exploring and for a loan of their stash of guide books and maps.
