Some of our favourite restaurants are opening on April 26, while others have planned their relaunches a little later.
For now, you can feast your eyes on these dishes, which have been in development during lockdown, but will be available to sit in soon, depending on regulations.

. Hanoi Bike Shop's Vietnamese bacon and eggs
Hanoi Bike Shop will be offering this brand new dish - Vietnamese bacon and eggs, vermicelli noodle cakes, radish and herb salad and sambal - when they reopen on April 26.

The Ubiquitous Chip will be offering an eight course tasting menu, with dishes including the Tweed Valley lamb loin, courgette and anchovy. Its open from outside drinks from April 26 and inside dining from April 29.

Fin & Grape are hoping to reopen on April 29, with bookings opening from April 1. This is their new vegetarian dish of grilled onions, wild garlic yoghurt and hazelnuts.

"Our new cheesy mushroom brioche features toasted brioche with grain mustard aioli, herb-roasted mushrooms, za’atar-dusted spinach and cave-aged Gruyère, herby wakame seaweed oil and a fried free range egg", says Honeycomb & Co's owner Ian D'Annunzio-Green. They're looking forward to re-opening on April 26.

Taisteal has moved from their Stockbridge postcode to 1 Forth Street, where they're getting ready to open in mid-May. Dishes that will be served include this Oreo baked Alaska, though there's also a Gressingham duck, confit onion dauphinoise, cherries and pistachio offering in the pipeline

8. The Pierhouse Hotel and Seafood Restaurant's apple and whisky tart tatin
Head chef Michael Leathley has made this apple and whisky tart tatin, which is pictured without the whisky walnuts that will be sprinkled on top. The Pierhouse Hotel and Seafood Restaurant will be reopening on April 29.
