The Edinburgh school had gone behind early on, but fought hard to go into the break 10-5 up and then held off the visitors in the second half to progress to the semi-finals later this week.
Stewart's Melville coach Bryn Lockie said: "We are pleased to get through as it was a really tough game. Both teams looked a bit rusty and made a few errors, but it made for an exciting spectacle and we are delighted with the way the boys stuck to the task."
Dollar began the match at a great pace and rightly went in front after just five minutes when back-row Scott Cubitt went over for an unconverted try after good work from the pack.
Two minutes later home No 8 Justin Duncan was sin-binned for a silly late challenge on Dollar full-back Alistair Cherry.
Despite both wingers Moray Tripney and Adam Dearden having good chances the visitors could not add to their points tally while they had a man advantage and they were made to pay for that when Duncan was back on the pitch.
It was the home centres David St Clair and Jack Hanney who really sparked their side into life with some powerful runs into the Dollar half.
Stewart's Melville's first points came from winger Leo Bargery after he cleverly cut inside to score a converted try under the posts after 20 minutes. Stand-off Alex Hagart added a penalty before the interval and the second 35 minutes were nail biting.
The best chances fell to Dollar with replacement scrum-half Thomas Hornall being agonisingly held up over the line before Stewart's Melville progressed.
