The Kinglas Fillet from Loch Fyne (priced from £21.50 for 250g) scooped the top prize at Scotland’s Food and Drink Excellence Awards 2019 after a team of judges – including food critic Jay Rayner – named it ‘Product of the Year’.
The fillet is cut from the crown of a salmon fillet, cured with brown sugar and sea salt, then gently smoked over oak shavings from retired whisky casks resulting in a mild, delicate flavour.
