Sea urchin is top taste at world's No 1 restaurant

Danish restaurant Noma has been rated the best in the world for the second year running in the food industry's "Oscars".

Four British eateries made it on to the list of the World's 50 Best Restaurants, produced by Restaurant magazine, with Heston Blumenthal's The Fat Duck, famed for mustard ice cream and snail porridge, at No 5. The Ledbury in Notting Hill is the highest new entry at number 34.

Claude Bosi's Hibiscus, Mayfair, central London, was ranked at 43, up six on last year, and Fergus Henderson's St John, also in central London, was ranked at 41, up two places.

The list is judged by a group of more than 800 chefs, journalists, food experts and restaurateurs from around the world. They commended Noma's leadership of a "new guard" of global cuisine.

Located in a converted dockside shipping warehouse, head chef is 33-year-old Rene Redzepi is renowned for serving innovative Nordic dishes such as sea urchin, musk and smoked marrow with dill, or beef cheek and pear.

William Drew, editor of Restaurant said: "We heartily congratulate Rene Redzepi for the difficult task of maintaining his position as the No 1 restaurant on our list, which underscores his commitment to redefining Nordic cuisine."
