WHEN Lucinda Bruce-Gardyne learned her son was allergic to bread, she refused to see him constrained to avoiding the kind of food most people take for granted. Instead she took to the kitchen and developed a gluten-free version that tasted so close to the original it soon found a commercial market.

Less than a year later, the Edinburgh-based mother-of-three has signed a deal with Starbucks that will see her bread used in hundreds of cafes across the UK.

With 15 per cent of the population thought to have an intolerance to gluten, her business is expected to generate more than 20 million by the end of 2010.

Bruce-Gardyne's company employs 15 people, but with her sights set on developing a range of products including croissants, cakes, sauces and ready meals, her success looks set to continue.

Her entrepreneurial spirit, born from concern for her son, has not only created a highly successful business, it has also made a product that will help millions of people enjoy the food they never thought they could.
