Food for thought about restaurant
RICHARD Bath made a mistake in his review of La Potiniere (Spectrum, 6 June). Hilary and David Brown were not the original owners. La Potiniere was opened some 40 years ago by a French lady who was (maybe still is) married to a Scots architect whose name escapes me. She introduced a single menu and one-sitting style, and was known for a rather strict attitude towards her customers, luckily alleviated by her husband playing the role of a French host and her own superb cuisine.

The style was continued for some time by the Browns, who acquired La Potiniere from her, and used, at least to start with, her recipes. Over a period of time, the Browns developed a deep knowledge of cooking and wines, and prospered. The new owners certainly deserve Mr Bath's accolades.
