Kitching picks city location for kitchen

MICHELIN-starred chef Paul Kitching has confirmed the venue for his new Edinburgh restaurant.

The chef, whose best-known dishes have included ingredients such as Horlicks and Weetabix, is to open the upmarket eaterie with his partner Katie O'Brien.

The new venture will takeover No 3, Royal Terrace, which is the site of what was No 3 restaurant until July this year.

The couple are currently refurbishing the property ahead of the restaurant's launch and no details of its name or menu have yet been confirmed.

However, it was previously suggested the venue would be named in memory of his late mother, Angela.

Mr Kitching, who has held a Michelin star for 11 years for his style of cooking at Juniper, near Manchester, said he was attracted to the city by the "open-mindedness" of Edinburgh's eating-out culture.

He told the Evening News earlier this year: "There's no city outside London that can match Edinburgh.

"We want to create another quality place like the Balmoral, Restaurant, Martin Wishart or the Kitchin.

"There's much more of a market here than in Manchester. There's an open-mindedness about Edinburgh, whereas in Manchester people's tastes are more classical."

Mr Kitching is said to take a hands-on approach to cooking, and is in his kitchen almost every night.

He has won praise for his style of cooking, which is classic French with an individual twist. Dishes in the past have included roast lamb with Weetabix.
