Britons 'to get taste for Nordic food'

Britain's taste for food will go Nordic this year, a leading supermarket has predicted.

Vasterbottensost cheese and herrings are forecast to be at the forefront of the foods tickling consumers' tastebuds, a survey has claimed.

An independent trends report, Food Watching, commissioned for Waitrose, said the simplicity of light Nordic cuisine together with its use of pared-down, high-quality ingredients were its main attractions.

Waitrose executive chef Neil Nugent said: "Scandinavian food is now being discovered for its simple, clean flavours."
