My perfect weekend: David Welch

David Welch is general manager of the George Hotel.

1 Who would be your ideal weekend companion and why? I would have to say Michelle Obama – she has a very sharp wit and I’m sure she’d be a wonderful conversationalist with lots of great stories to tell.

2 Where would you take him/her in Edinburgh and why? I would take her up to the top of Calton Hill as the sun is rising to show her the wonderful views across our fabulous city. This is a very special place – the view of the city and seascape is so fantastic – I always encourage our guests to make time for a visit.

3 Where would you go for breakfast, lunch and dinner? We’d start the day with a leisurely late breakfast in the National Gallery at the bottom of the Mound. They make fabulous porridge, great fuel for the day ahead. Later we’d have lunch at the Lobster Shack in North Berwick alongside the harbour. It’s a great place to enjoy simple, locally sourced food that’s full of flavour. For dinner I would suggest Martin Wishart’s – the food is fantastic and really shows off the best of Scotland’s larder. I think Michelle would appreciate that.

4 What item would you not be without? I’m sure this is a bit of a cliché these days but I never travel without my trusty Blackberry – I cannot stand not being in touch. On holiday it has its own hammock to sunbathe in.

5 How would your perfect weekend finish? We’d raise a toast to the wonderful city of Edinburgh with a glass of our finest champagne at Tempus.
