Recipes: Treacle tart | Iced banana parfait with tuille biscuit
Treacle tart
Serves four
Ingredients
For the pastry:
400g plain flour
5g table salt
200g unsalted butter
100g icing sugar
Zest of 1 lemon
1 vanilla pod
2 egg yolks
2 whole eggs
For the treacle filling:
200g unsalted butter
3 eggs
75g double cream
10g salt
900g golden syrup
170g fresh brown breadcrumbs
Zest of 3 lemons
60ml lemon juice
Method
For the pastry, combine all dry ingredients with the butter, vanilla seeds, and lemon zest, then gradually add the eggs until the dough comes together. Place in a pastry baking tin.
For the filling, melt the butter to beurre noisette stage then pass through a sieve. Weigh out 115g and leave to cool. Warm the golden syrup then add the breadcrumbs. Whisk the eggs, cream and the salt together then add to the syrup with the lemon juice, zest and the beurre noisette. Bake on 150C for 40 to 50 minutes. Serve warm with ice cream.
Iced banana parfait with tuille biscuit
Serves four
Ingredients
For the parfait:
500g banana puree
150g double cream
4 egg yolks
75g caster sugar
1.5 tbsp water
25ml banana liqueur
For the tuille biscuit:
4 egg whites
200g caster sugar
100g plain flour
75g melted butter

Hide AdWarm through and reduce the banana puree to 250g and leave to cool. Bring the sugar and the water to 120C, meanwhile whisk the egg yolks until ribbon stage then slowly add the syrup and continue to whisk until the sabayon is cold.
Whisk the double cream and banana liqueur to soft peak then add the sabayon and the puree then freeze in a flat tray or suitable moulds until frozen.
For the tuille biscuit, melt butter and leave to cool. Whisk egg whites to stiff peaks then gradually add the sugar whilst whisking. Sift the flour and fold into the mix then add the butter. Refrigerate for two hours before use.
Serve with chocolate sorbet or warm chocolate sauce.
