Kookies & Co: the new business delighting Edinburgh locals with its stuffed, gooey cookies


Kate, a nursing student who has worked as a healthcare practitioner during the pandemic, has been overwhelmed by the sudden success of her stuffed cookies which she and her two flatmates, also working in healthcare, started making out of boredom in lockdown.
“We were just so sick of coming home and talking about coronavirus all the time, especially when we were also working with it all the time. We were dropping off cookies, cupcakes and stuff to all our friends as a sort of pick me up, and our friends started really encouraging us to sell them.”

Kookies & Co sees Kate and her flatmates rustle up a variety of cookies oozing with toppings such as Nutella, white chocolate, Rolos and Terry’s chocolate orange segments.
The stuffed creations can be bought in boxes of three for £6, six for £10 and ten for £15 – with varieties like Raspberry and White Chocolate (pictured), Kinder Bueno and Nutella, Reese’s Peanut Butter Chocolate and Rolo Salted Caramel.
Kate hopes to be able to offer a monthly special as the business progresses, and hopes to be able to provide Kookies & Co’s treats to cafes and coffee shops in the capital.
The cookies are available to order by sending the Kookies & Co team a direct message on Instagram, with the team offering delivery and collection options depending on your postcode.
Delivery takes place every weekend between the hours of 12 and 4pm, with Kate urging those looking to order to get in quick before the stuffed delights sell out.
