Founded by Prue Leith in 1972 and now owned by Compass, the hospitality firm has provided catering for the EICC since it opened almost 20 years ago.

Marshall Dallas, who succeeded Hans Rissmann to become EICC chief executive in October, said: “The quality of Leith’s locally-sourced produce is the very best – their committed and creative team has left an excellent impression on the many thousands of delegates who attend events with us each year.”

He added: “Leith’s really have become central to the EICC’s offering and are part of the reason we are so highly-rated all over the world.”

Dallas, a former food and beverage manager at Gleneagles Hotel, told The Scotsman earlier this month that sales at the conference centre during the first five months of this year were up about 40 per cent on the same period in 2014.

The venue has been selected to host the Rehabilitation International 23rd World Congress in October 2016, in a move set to provide the local economy with a boost of more than £2 million. It will also welcome the annual meeting of the British Society of Echocardiography in 2017 and 2020, and the Council of International Schools’ forum this year and in 2017.
