Maison Bleue doubles up in capital growth push

The father-and-daughter team behind prominent eatery Maison Bleue in Edinburgh's Old Town are expanding the business by opening a second branch in the city within weeks.

Dean and Layla Gassabi will welcome diners to the new Maison Bleue Le Bistrot in Morningside, after seeing a chance for a “quirky” offering of this kind in the area.

Dean said: “This is a major investment for us and comes just a year after the extensive refurbishment of our Victoria Street restaurant, which is a sign of our confidence in the Maison Bleue name and brand.”

He added: “We have been looking for a considerable time to find the right venue and were keeping a particularly close eye on Morningside. When this opportunity came on the market we knew it was perfect.”

Le Bistrot will have 45 covers, complemented by outdoor space, compared with 70 at the original restaurant. It is set to open in the second week of April.
