In an enviable task, author and photographer Milly Kenny-Ryder has travelled the length and breadth of mainland UK to find the best bakeries for her new book Britain’s Best Bakeries.
Featuring and photographing a plethora of the most exciting bakeries, from London bread royalty Eric’s and Toad (both pioneering sustainable farming practices with UK-grown grain) to Manchester-based fermentation experts Pollen, whose croissants take four days to produce from start to finish. There is a Filipino bakery with purple yam tart; a service station off the A303 that serves up Argentine empanadas and a bakery in Bristol that has packets of croissant crisps. Whether your passion is pastry, cake, sandwiches, pizza or bread, this new book tells you where to find the absolute finest.

This Govanhill bakery is owned by Sam and Anna Luntley, who, MIlly says, quietly excels in producing some of Scotland’s best bakes. Their success with Bakery47 led to the opening of Two Eight Seven in Govanhill in 2021 where you’ll find creative bakes - sweet and savoury. Twelve Triangles is something of an Edinburgh institution, with multiple venues across the city as well as one in Melrose. This bakery, which often sells out fast, is the first from Darcie Maher. Lannan, which derives from the Scottish Gaelic for ‘house’ , opened in 2023 and has been a smash hit ever since. The bakery’s weekly-changing menu combines Maher’s signature bakes, from classic viennoiserie to custard slices, yum yums and iced buns, with limited-run creations using local and seasonal produce including lemon meringue tarts, dauphinois pastries and crème brûlée danishes.
