Katia’s using her loaf at French bakery

BUSINESS is on the rise at The Wee Boulangerie, which hopes to deliver some Gallic charm as well as some great bread to the Clerk Street area.

Set up by trained baker Katia Lebart, 40, in July this year, the bakery has quickly amassed a loyal following, one which the former Parisian hopes will continue to grow.

The shop offers a range of items such as fresh bread, pastries, danishes, biscuits and for the hungry lunchtime crowd, fougasses – the French version of calzones which come stuffed with cheese and other ingredients. All the products are made on site from scratch, using, where possible, locally-sourced, quality ingredients.

Katia said: “I’ve been living in Edinburgh for 14 years and thought that there was a gap in the market for a local fresh bakery. Back in France there is a bakery for every 1500 inhabitants, people take their bread very seriously. Perceptions are beginning to change over here now and we are attracting a small but loyal amount of regulars.” Asked whether she believed her business could thrive in the face of competition from the big supermarket’s, she said: “Yes because we are not really selling the same product, what we sell is real bread which is made using slow fermentation with no additives. It is completely different and much better for you.”

This festive season Katia will also be getting in the spirit 
by offering fresh stollen and 
panettone.

There are also plans to apply for a temporary licence to allow the serving of mulled wine.
