Something for the weekend: Hendrick's Cucumber Sherbet

ONCE allegedly outlawed by the EU, misshapen cucumbers are back in supermarkets this month. Hendrick's gin has concocted this cocktail in its honour, but there is more campaigning to be done. 35ml-50ml Hendrick's gin

75ml squeezed cucumber juice

125ml ginger beer

pinch cumin

1 wedge lime/pink grapefruit

Fill a highball glass with the ice, gin and ginger beer. Pour in the fresh cucumber juice to make a two-coloured layer. Squeeze and drop in the grapefruit or lime wedge and sprinkle with crushed cumin to garnish.
