Probably making its first appearance in Harry's New York Bar in Paris in the 1930s, Between the Sheets is a variation of the Sidecar. It was said to have been created by Harry MacElhone, who replaced some of the cognac with white rum, giving it more of a summery feel. It fell out of favour for a time but with today's ever-increasing interest in cocktails, it's back up there with the best. And where does the name originate? Between the Sheets

1 part cognac ; 1 part white rum; 1 part Cointreau; part lemon juice

Fill a cocktail shaker with ice and add all ingredients. Shake well. Strain and serve with a twist of lemon.
