"Your yearly sugar allowance in one bite". David Hetherington of Locker Hyndland shares his recipe for Creme Egg brookies
Creme Egg Brookies
One of the big recent trends is the brookie, which is a half cookie, half brownie hybrid, or something like that. This week I experimented and pulled off this sugar-filled monster, the cream egg brookie. Thanks to a bit of thought and deliberation we came up with a cake that pretty much contains your yearly sugar allowance in one bite.
Serves 6
6 Creme Eggs
For the cookie
120g unsalted butter, softened
200g soft light brown sugar
1 egg
1 tsp vanilla extract
125g plain flour
1/4 tsp salt
1/4 tsp bicarbonate of soda
100g white chocolate chips
For the brownie
110g unsalted butter
110g dark chocolate
2 eggs
225g caster sugar
1 tsp vanilla extract
1/4 tsp salt
60g plain flour
2 tbsp cocoa powder
1 Preheat the oven to 180°C, grease and line a 20cm square cake tin.

Hide Ad2 For the cookie, beat the sugar and butter together until they become light and fluffy, add the egg and beat again until well combined. Add the rest of the ingredients and mix well, scraping down the sides of the bowl if needed until it forms a sticky dough. Once ready, dump it into the cake tin and spread out evenly.
3 Pop the tray into the oven for about 8-10 minutes to let the mix firm up a little. Meanwhile get the brownie started.
4 Over a pot of simmering water, melt the butter and chocolate together.
5 Using an electric mixer, beat the sugar and eggs together until pale and fluffy. Fold in the melted chocolate mix, then fold in the rest of the ingredients.
6 Pull the cookie mixture out of the oven and evenly distribute the cream eggs, pushing into the cookie base a little, now pour over the brownie mix and bake for around 40 minutes. The top should have a crisp shell, and the centre should be JUST cooked, so there’s a minimal amount of batter left on a skewer when it’s inserted into the middle.
7 Allow the brookie to completely chill before cutting. Enjoy.
